Piña Colada Puree


Baby 8-10 months
Makes 3-4 portions
Suitable for freezing

1/2 cup of cooked white quinoa
5-6 chunks of pineapple
1/2 a banana
1/3 cup of unsweetened coconut milk
1 tbs of shredded unsweetened coconut
A couple of fresh mint leaves

Cook the quinoa according to package instructions and set aside to cool.
Place the mint leaves in a small bowl and crush them with a spoon to release the flavour, pour the coconut milk and let stand for a couple of minutes and then discard the leaves.
Place the cooked quinoa, pineapple, banana, shredded coconut and coconut milk in a blender and puree until smooth. 
Best served chilled.

Tip: Pineapple does not need to be cooked but if you know your baby is sensitive or you find the pineapple to fibrous, you might want to steam the pineapple gently which also reduces its acidity.
